Rican Style
First brind the turkey with salt and water to rinse the blood out
and make the meat tender.
Next day rinse it and make tiny cuts that you stuff
with garlic,
Heat up the sofrito (garlic-parsely-carrot) till the flavor comes through and cool it off
before applying it,
Add pickles and seasoning.
Cut
onions and stuff it inside the turkey for flavor and then take a small
bottle of mojo and pour it over the whole Turkey together with good quality olive
oil
Marinate for 2 days and bake according to directions basting it
every hr
cover so the juices remain and the meat doesn't dry.
Been doing it
since 1997 and it never fails.
